One of the first addresses that comes to mind for desserts in Gaziantep, Orkide is famed especially for its legendary pistachio katmer eaten at breakfast. A queue forming outside for the freshly made katmer in the mornings is a common sight. Katmer is made by sprinkling clotted cream and crushed Antep pistachio between dough rolled as thin as a veil, then baking it crisp in a stone oven. Folded in two and sliced before serving, this sweet — eaten hot — offers an unforgettable flavour in the harmony of pistachio and cream. Alongside katmer, with its twisted kadayıf, pistachio baklava and ice-cream desserts, Orkide is one of the most beloved representatives of Antep's rich dessert culture.
